Mini Pumpkin Custard
Ingredients:
5 Eggs
1 Cup - Coconut Milk
1 1/2 Cup - Brown or Palm Sugar
1/2 Tbsp. - Salt
6 Mini Pumpkins
Instructions:
1. Cut the top of the mini pumpkins and hollow out the pumpkins (see picture above for guidance)
2. Steam or bake in 350 degree oven for 20 - 25 minutes or until soften to your liking
3. Mix all ingredients together
4. Pour mixture into the partially cooked mini pumpkins
5. Steam or bake in 350 degree oven for an additional 20 minutes
