Ingredients:
6 oz. skinless salmon fillet
1 clove garlic, minced
Freshly ground black pepper, to taste
Sal, to taste
1 avocado, pitted and diced
¼ medium red onion, chopped
1 tbsp chopped fresh cilantro
2 tbsp Lemongrass By Chef Ooh Lemongrass & Ginger Vinaigrette

Instructions:
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
On the prepared baking sheet, rub the salmon with the garlic, pepper, and 1 tbsp of Lemongrass By Chef Ooh Lemongrass & Ginger Vinaigrette.
Bake for 10 -12 minutes, until cooked through
Make the avocado topping: In a small bowl mix together the avocado, red onion, cilantro, 1 tbsp of Lemongrass by Chef Ooh Lemongrass & Ginger Vinaigrette, salt and pepper to taste. Gently mix, don’t overmix to avoid breaking up the avocado.
Spoon the avocado topping over the salmon.
